Weekly Menu - Eat, Drink and Be Merry For Tomorrow We Diet Edition

Woohoo! House guests and then a diet. What more could I ask for?

Actually, I love house guests and Fat Smashing isn't so bad either. Most of the recipes I will be using for Phase 1 come from the book Fresh from the Vegetarian Slow Cooker: 200 Recipes for Healthy and Hearty One-Pot Meals That Are Ready When You Are - a book that I love and would buy if I, you know, bought things. If I ever come across it used, it is so mine!

My brother, vegetarian SIL, and picky niece (5yo) will be here this weekend. I am forbidden from serving beans, because picky niece had a meltdown the last time, so when I saw Kris post Ellie Krieger’s Aromatic Noodles with Lime-Peanut Sauce and that Christine's daughter loved the mushroom barley soup I knew they would be the perfect guinea pigs.

As usual, all meal are served with a salad, fruit of my choice, and cut fresh vegetables.

Menu Plan - Week of 1/17-1/23

1/17 - Thursday
Greek Penne

1/18 - Friday
Pizza

1/19 - Saturday
Mushroom Barley Soup, Beer bread

1/20 - Sunday
Ellie Krieger’s Aromatic Noodles with Lime-Peanut Sauce

1/21 - Monday
Vegetarian Jambalaya (I will probably add sausage for the people who want it)

1/22 - Tuesday
Kids: Baked Vegetable Stew with Biscuits on top
Adults: Bean and Vegetable Ragout, brown rice

1/23 - Wednesday
Kids: Chicken and Black Bean Enchiladas with Gooey Jack Cheese
Adults: Arroz non Pollo
